Beetroot barsotto with zesty salmon

Barsotto = risotto made using barley instead of rice! Thought I would change it up a bit and substitute rice with barley, which is higher in fibre and gives the risotto a different texture. I used the last of this year’s home grown beetroots for this delicious recipe…if you love beetroots check out my borscht recipe and if you fancy something a little sweet give my beetroot brownies a try!

(Serves 2)

  • 250g Beetroot (with skin on) cut into inch chunks
  • 1/2tsp. Olive oil or rape seed oil
  • 2 sticks of Celery very finely chopped
  • 1 Garlic clove crushed
  • 75g Pearl barley
  • 600ml stock
  • 2 Salmon fillets
  • 1tsp. Lemon juice
  • 1/2tsp. Lemon rind
  • 1/2tsp. Honey
  • 1/2tsp. Chili powder
  • Pepper

For the barsotto:         

  1. Preheat your oven to 200oC
  2. Coat the beetroot in 1/2tsp of the oil and put in the oven for 40 minutes
  3. While the beetroot is in the oven to a sauce pan over a medium heat add the remaining oil along with the celery
  4. Once the celery has just cooked through add the barley as well as the garlic to the pan and stir for 2 minutes
  5. Now add your stock
  6. Turn the heat up till the stock starts to boil and then reduce the heat adjust so the stock begins to simmer
  7. Leave it to simmer occasionally stirring – you may need to add a splash of water if it looks like it’s becoming too dry
  8. Once the beetroot has finished roasting (leave the oven on for the salmon) add it to your pan of barley, which by this point should have been cooking for at least half an hour – it should all turn a lovely deep purple colour
  9. Allow the barsotto to continue to simmer and for the beetroot flavours to be absorbed

For the salmon:

  1. Mix the lemon juice, lemon rind, pepper, honey and chilli powder together and coat your salmon fillets in it
  2. Leave the fillets to marinate for 15 minutes and then place on a non-stick baking tray
  3. Bake in a 2000C oven for 10 minutes
  4. Serve the salmon with the barsotto and some steamed greens
