Miso cod with soy beans and black glutinous rice

(Serves 2)

  • 2 Cod fillets
  • 1tsp. Miso paste (if you cannot find miso paste in a jar, you can use a sachet of the miso puree used for soup instead)
  • 2tsp. Lime juice
  • 1 Small clove of garlic minced
  • 1tsp. Ginger finely chopped
  • 2tsp. Light soy sauce
  • 140g Black glutinous rice (brown rice can be used as alternative or white)
  • Handful of Soy beans or edamame beans
  • Red chili finely chopped
  • Spring onions sliced in rings
  1. Mix the miso paste, lime juice, soy sauce, ginger and garlic and coat your fish in the marinade – Allow to marinate for about 15 minutes
  2. Warm your oven to 200oC and cook your fish for 15 minutes (depends on fillet size)
    1. While your fish is cooking cook the rice and beans
  3. Garnish with chili and spring onionsMiso Cod and black rice

Miso is a Japanese seasoning paste made from fermented soy beans, which is high in the antioxidants manganese and zinc, as well as salt so be careful to use it in moderation. Edamame beans are a great source of folic acid, manganese, vitamin K, and protein; containing 10.9g of protein and 73% of your daily recommended folic acid per 100g. Why not boost the level of antioxidants in this meal by having a cup of green tea alongside it!
