Baked spiced nectarines with vanilla yoghurt

Bought some extra juicy nectarines in the local market and came up with this great summer time dessert! This recipe is also perfect for those nectarines (or peaches) that you planned to eat but forgot about and have gone a bit squishy.

(Serve 2)

  • 1 Nectarine sliced in half and stone removed (can use a peach instead)
  • 2tsp. Agave syrup or honey
  • 100ml Boiling water
  • 1tsp. Cinnamon
  • 1 Star anise
  • 2 Cloves
  • A dash of Nutmeg
  • 1/2tsp.Cornflour
  • 200g Low fat natural yoghurt
  • 1/2 Vanilla pod seeds scraped out (or 1/2tsp. vanilla extract)
  • 2tbsp. Pomegranate seedsBaked peaches with vanilla yoghurt (1)
  1. Heat your oven to 200oC or 180oC fan
  2. Mix the vanilla seeds with the yoghurt and put to the side to let the flavour infuse while the nectarines bake
  3. In a jug add your agave, cinnamon, star anise, cloves
  4. Pour into the jug the boiling water and stir to dissolve the agave/honey
  5. Remove a small amount of your spiced liquid into a tea cup and mix in the corn flour, then add back to the jug
  6. Place your nectarine skin side down in an oven proof dish and pour on your liquid mixture
  7. Bake in the oven for 30 minutes, stirring the sauce and basting your nectarine halves with the sauce half way through
  8. Serve the warm nectarine with your yoghurt and a sprinkling of pomegranate seedsBaked peaches with vanilla yoghurt 2 (1)
