Grilled Greek chicken with tzatziki

I’ve gone Greek style with this one. Extra fresh flavours and so delicious…give it a try!

(Serves 1)

  • 1 Chicken breast
  • 1 Garlic clove crushed
  • 2tsp. Extra virgin olive oil
  • 1tsp. Red wine vinegar
  • 1tsp. Oregano 
  • 2tsp. Lemon juice
  • Salt & Pepper
  • ½ Cucumber peeled, seeds scooped out, and cut into semi-circles
  • 75g Greek yoghurt
  • A couple of mint leaves finely chopped
  1. Mix 1tsp. of oil, 1tsp. of lemon juice, 1/2 a garlic clove, the vinegar, oregano, along with salt & pepper in a bowl
  2. Score your chicken breast in both directions and coat in the marinadeGreek chicken with tzatziki  (1)
  3. Allow the chicken to marinade for at least an hour
  4. Griddle (or BBQ) your chicken for 15 minutes or until the juices run clear and serve with your tzatziki plus some fresh sliced tomato if you have any

For the tzatziki (make this while the flavours are infusing into the chicken):

  1. Put the yoghurt, ½ a garlic clove, 1tsp. lemon juice, 1tsp. oil, and mint into a bowl
  2. Try get out as much moisture from the cucumber as you can be wrapping it in kitchen towel and lightly squeezing it
  3. Add the cucumber to the bowl containing the yoghurt mixture and stir it in
  4. Season the tzatziki with a little salt
